Pizza

- 1/2 C Zucchini peeled and cubed
- 1/4 Tsp. Apple Pie Spice
- 1/4 Tsp. Cinnamon
- 1/2 Tsp. Vanilla
- 2 Tb. Sugar Substitute ( I used the Sukrin:1)
- 3 Oz. Cream Cheese softened
- 1/2 Tsp. Lemon Juice
- 1/4 Tsp. Vanilla
- 2 Tb. Sugar Substitute ( I used the Sukrin:1)
- 1 Egg Yolk
- 2 1/2 Tb. Almond Flour
- 1 Tb. Coconut Flour
- 1 1/2 Tb. Oat Fiber optional- If you want to omit this, use 1/2 Tb. more coconut flour
- 3/4 C Mozzerella Cheese
- 2 Tb. Sugar Substitute ( I used the Sukrin:1)
- 1/4 Tsp. Baking Powder
- 1/4 Tsp. Vanilla
- 1 1/2 Tb. Butter
- 1 Egg
- 1 Pinch Salt

- I start by peeling the zucchini and chopping it into bite size pieces. Then combined the zucchini, 1/4 tsp. apple pie spice, 1/4 tsp. cinnamon, 1/2 tsp vanilla, 2 tb. sugar substitute and 1 tb. butter in sauce pan and heat on low while you are making the rest of the pizza. Stir the zucchini mixture occasionally.
- Next,in a separate bowl, combine 3 oz cream cheese, 1/2 tsp. lemon juice, 1/4 tsp. vanilla, 2 tb. sugar substitute, and 1 egg yolk. Set this aside and work on making the dough.
- Mix 2 1/2 tb. almond flour, 1 tb. coconut flour, 1 1/2 tb. oat fiber (optional. If you don't want to use the oat fiber, add 1/2 more tb. of coconut flour) 3/4 cup Mozzerella cheese, 1 egg, 2 tb. sugar substitute, 1/4 tsp baking powder, 1/4 tsp. vanilla, 1 1/2 tb butter and a pinch of salt in a pan. I then heat everything on low mixing constantly until it forms a dough ball.
- On a parchment lined baking sheet form your pizza crust. It can be any shape you want. Just make sure it has a lip around the outside. Bake for 5-7 minutes at 375 degrees.
- After the crust bakes for 5-7 minutes, remove from oven. Place the cream cheese sauce within the lip of the pizza. Top with the sauce and bake for another 12-15 minutes. Be careful not to over bake. It will be slightly jiggly but will firm up as it cools.
This dish is really one for the books. Do not be fooled by the title, though. It doesn’t have apples in it. It actually has zucchini! That is the best part! I know I sure miss my apples and zucchini is a fantastic substitute for those missing apples in cooked dishes. The “sauce” has the flavor of a cheese danish! This pizza is great for breakfast, afternoon coffee, or even dessert!
