Keto “Apple” Breakfast Pizza

  1. I start by peeling the zucchini and chopping it into bite size pieces. Then combined the zucchini, 1/4 tsp. apple pie spice, 1/4 tsp. cinnamon, 1/2 tsp vanilla, 2 tb. sugar substitute and 1 tb. butter in sauce pan and heat on low while you are making the rest of the pizza. Stir the zucchini mixture occasionally.
  2. Next,in a separate bowl, combine 3 oz cream cheese, 1/2 tsp. lemon juice, 1/4 tsp. vanilla, 2 tb. sugar substitute, and 1 egg yolk. Set this aside and work on making the dough.
  3. Mix 2 1/2 tb. almond flour, 1 tb. coconut flour, 1 1/2 tb. oat fiber (optional. If you don’t want to use the oat fiber, add 1/2 more tb. of coconut flour) 3/4 cup Mozzerella cheese, 1 egg, 2 tb. sugar substitute, 1/4 tsp baking powder, 1/4 tsp. vanilla, 1 1/2 tb butter and a pinch of salt in a pan. I then heat everything on low mixing constantly until it forms a dough ball.
  4. On a parchment lined baking sheet form your pizza crust. It can be any shape you want. Just make sure it has a lip around the outside. Bake for 5-7 minutes at 375 degrees.
  5. After the crust bakes for 5-7 minutes, remove from oven. Place the cream cheese sauce within the lip of the pizza. Top with the sauce and bake for another 12-15 minutes. Be careful not to over bake. It will be slightly jiggly but will firm up as it cools.
