So this recipe kind of came fromĀ boredom and wanting to be creative with what I already had in the house. I hate having to go to the store to buy ingredients for a specific dish. I really try to use what I have left over or just in our food storage! A few things were required in this recipe. 1-I had to already have the ingredients. 2-It had to be tasty! and 3-I wanted it to be healthy. I think this recipe hit all the requirements. So, lets get started!
I first started with the dressing. I zested the orange, juiced the orange and combined the Apple Cider Vinegar, zest, juice, sugar and oil together. Really whisk this good. Set aside!
Then I took the quinoa, beans, corn, and onion and mixed them together.
I then took the chopped Mandarin Oranges and folded them in gently.
Drizzle the dressing over the top, cover the bowl with plastic wrap and refrigerate for 2 hours to allow the flavors to marry together.
Salt and pepper to taste and enjoy!

- 1 C Black Beans drained
- 1 C Mandarin Oranges
- 1/2 C Red Onion chopped
- 2 C Qunioa cooked
- 1 Tb Sugar
- 1/4 C Apple Cider Vinegar
- 1/4 C Olive Oil Extra Virgin
- 1 Orange Zested and Juiced

- Gently fold in the Mandarin Oranges to the quinoa mixture.
- Drizzle the dressing over the top of the quinoa mixture. Fold in the dressing, cover with plastic wrap and refrigerate for 2 hours to allow the ingredients to marry.
