Quinoa Fried Rice

Ingredient List

2 C Day old cooked Quinoa

1/2 Tsp. Minced Ginger

1/4 C Minced Onion

2 eggs scrambled

1 Tb + 1 Tsp Sesame Oil

1 Tb Soy Sauce

1/2 C Peas and Carrots or Veggie Mix

As we all know by now, I am really working on different fish meals. BUT WHAT DO YOU SERVE WITH FISH?!? Rice and quinoa. Well those are the options as of right now in this household with my picky husband. (Says the woman who won’t eat fish….lol) So tonight I am making this quinoa dish to go along with the Teriyaki Salmon. Here is how I made it.

I start by sauteing the onion and ginger in the sesame oil until they are nice and tender.

I add the veggies and saute them for about 3 minutes.

Next I add the quinoa, eggs and soy sauce to the mix. I put it on low heat and cook everything together until it is all warm.

Allow it to sit for a few minutes to absorb all the sauces and juices. When you are ready, serve it up and enjoy!

This makes a great side for your Teriyaki Salmon!
