Spanish Rice

Ingredient List

2 Tb. Oil

2 Tb Chopped Onion

1 1/4 C Rice

2 C Chicken Broth

1 C Salsa

This is a really fast rice to make. It has great flavor and pairs perfectly with Fish Tacos. Here is how I made it.

I first started by heating up the oil in a pan with a lid. Then I sauteed the onions until they are tender and translucent.

Now you will want to add your UNCooked rice. Toast the rice until it is a golden brown. Stir often so the rice doesn’t stick to the pan.

Now you add the salsa and chicken broth. Stir everything together. Bring to a simmer and cover and allow to cook completely or until the rice has soaked up all the fluid. Fluff with a fork.

Pretty Simple Stuff!
