- 3 Tb Butter
- 3/4 C Nut Butter
- 2 Tb Heavy Whipping Cream
- 1 C Unsweetened Coconut Shredded
- 1/4 C Hemp Hearts
- 4-10 Drops Liquid Sucralose This measurment depends on your tastebuds!
- 1 Tb Cocoa Powder
- 2 Tb Sugar Substitute I used Xylitol
- 1 Tsp Vanilla
- 1/4 Tsp Salt optional

- In a medium size sauce pan melt together the butter, nut butter of your choice, sugar substitute and heavy whipping cream. Keep the heat low so you do not burn the butters. Mix continuously. Once melted, remove from heat.
- Next mix in the cocoa powder, vanilla, and 4-10 drops of liquid sucralose until your taste buds are satisfied. I did 5 drops.
- Next stir in the shredded coconut and the hemp hearts. Mix until well combined.
- Scoop the cookie mixture onto a piece of wax paper. The mixture will be wet and will spread a bit. Let the cookies air dry or you can place in the refrigerator to harden up faster. I usually do a combo of the 2 at our house.
I know what you are thinking. No Bake Chocolate Cookies that are low carb!?! This recipe was one that I worked on for a while. We are big cookie lovers in this household and we needed to figure out a way to enjoy this family favorite without falling off the wagon. And, I think I have done just that.

When my daughter came home from school and saw these cookies her heart sank. She was like “WHY?” Why would I make one of our favorite cookies when we are on a diet? But to her surprise, these were made for us to enjoy! Now they aren’t the exact same flavor and texture of the Traditional Drop Cookies, but for us, they were just what we needed in our diet! (Lol, if you can call it that)
