Chicken Zucchini Alfredo
Instructions
  1. Cook the zucchini slices in a pan with the heated olive oil. Flip once and cook all the way through. Place the cooked zucchini to the side.
  2. Saute the onions and garlic in the melted butter. Cook until tender.
  3. Add the heavy cream and the Parmesan cheese to the onion and garlic. Stir while the sauce starts to thicken.
  4. Add the cooked bacon, salt and pepper, and parsley to the sauce. Stir and heat.
  5. Lightly grease a casserole dish. The bottom layer is the cooked crumbled chicken. Then place the cooked zucchini on top of the chicken.
  6. Next pour the sauce over the top of the zucchini layer and then top with the mozzarella cheese. Cover with foil. Place in a 400 degree oven and bake covered for 15 minutes. Remove the foil for the last 3 minutes.
  7. Cool for a couple minutes then enjoy!

I have a question for ya. Maybe you can help me answer it. Why would anyone go out to eat for Italian Food when it is SO Easy to make and so much cheaper? I know the answer. Well, at least some of the answers. I know with the busy lives most of us live and the constant go go go, it is easier to just grab something on the way home or just gather the family and just have someone else deal with the mess and the fuss. I get it. I really do. But, if you are looking for an easy recipe that can be made ahead of time and then just heated up when you are ready for it, this is the recipe. So much flavor and easy! This is also a great recipe if you are eating a Low Carb/High Fat diet. Here is how I made this Chicken Zucchini Alfredo.

I slice up the zucchini and start cooking it in the olive oil. Flip them one time and then remove from the pan. Place the cooked zucchini to the side.

Now it is time to work on the sauce. Take a pan and saute the onions and garlic in the melted butter. Cook until tender.

Now add the heavy cream and the Parmesan cheese to the onion and garlic. Stir while the sauce starts to thicken.

Now add the cooked bacon, salt and pepper, and parsley to the sauce. Stir and heat.

Now it is time to assemble the dish. Lightly grease a casserole dish. I used a circle one, but use what ya have. The bottom layer is the cooked crumbled chicken. Then place the cooked zucchini on top of that.

Next pour the sauce over the top of the zucchini layer and then top with the mozzarella cheese. Cover with foil. If you are making this ahead of time, this is when you would place the dish in the refrigerator. If you are making it now, place in a 400 degree oven and bake covered for 15 minutes. Remove the foil for the last 3 minutes.

Allow to cool for a few minutes and then enjoy!
