Cook the zucchini slices in a pan with the heated olive oil. Flip once and cook all the way through. Place the cooked zucchini to the side.
Saute the onions and garlic in the melted butter. Cook until tender.
Add the heavy cream and the Parmesan cheese to the onion and garlic. Stir while the sauce starts to thicken.
Add the cooked bacon, salt and pepper, and parsley to the sauce. Stir and heat.
Lightly grease a casserole dish. The bottom layer is the cooked crumbled chicken. Then place the cooked zucchini on top of the chicken.
Next pour the sauce over the top of the zucchini layer and then top with the mozzarella cheese. Cover with foil. Place in a 400 degree oven and bake covered for 15 minutes. Remove the foil for the last 3 minutes.
