- 3 Oranges zested
- 1 C Butter room temp.
- 3/4 C Brown Sugar packed
- 3/4 C Coconut Sugar or white sugar if you prefer
- 2 Eggs
- 1 Tsp Vanilla
- 3 C Oatmeal
- 1 1/2 C Flour
- 1 Tsp Cinnamon
- 1 Tsp Baking Soda
- 1/2 Tsp Salt
- 1 C White Chocolate Chips
- 1 C Dried Cranberries I prefer the Orange Flavored Cranberries

- Preheat oven to 350 degrees.
- In a mixing bowl combine the zest, butter, sugars, eggs, and vanilla.
- In a separate bowl, whisk together the oats, flour, cinnamon, baking soda, and salt.
- Mix the dry ingredients into the wet ingredients.
- Scoop the batter onto a parchment lined or silicon mat lined baking sheet. Bake for 10-12 minutes or until the cookies are starting to turn golden around the edges of the cookie.
- Cool on the baking sheet for 1 minutes. Transfer the cookies to a cooling spot. I use wax paper that has a folded bath towel under the paper or you can use a cooling rack.
I want to tell you about these cookies. I was actually inspired to make these cookies after I had enjoyed one similar to them at one of my favorite coffee shops. I bite and I was in love. I came home and was on a mission to figure out the recipe for these cookies. I had no luck looking for the recipe online. So I had to start from the ground up developing these cookies. Several perks to starting from the beginning with the recipe. I can make this recipe to fit my needs. I am not huge on sugar, so I was able to develop the cookie to be made with coconut sugar instead of a ton of white sugar. Anyway, lets make some cookies!
First I mixed the butter, sugars, eggs, orange zest, and vanilla.
In a different bowl, mix together the oats, flour, salt, cinnamon, and baking soda.
Mix the dry ingredients into the wet ingredients. Then add the white chocolate chips and the dried cranberries. I REALLY like the Orange Infused Dried Cranberries from Trader Joe’s. Please use whichever brand you prefer.
On a baking sheet that is line with a silicon mat or parchment paper, scoop out the cookies. Bake for 10-12 minutes in a 350 degree oven.
Cool on a clean bath towel with wax paper on it or a cooling rack.
I love to enjoy these cookies with a good cup of coffee or a nice cup of Jasmine Tea.
