The tangy orange flavor of these cookies are wonderful with the chew of the dried cranberries and the sweetness of the white chocolate chips. A real crowd pleaser!
In a mixing bowl combine the zest, butter, sugars, eggs, and vanilla.
In a separate bowl, whisk together the oats, flour, cinnamon, baking soda, and salt.
Mix the dry ingredients into the wet ingredients.
Scoop the batter onto a parchment lined or silicon mat lined baking sheet. Bake for 10-12 minutes or until the cookies are starting to turn golden around the edges of the cookie.
Cool on the baking sheet for 1 minutes. Transfer the cookies to a cooling spot. I use wax paper that has a folded bath towel under the paper or you can use a cooling rack.
