Challenge Accepted! Oysters

Ingredient List

1 C Pasta, cooked

3 Tb Olive Oil

1/4 Onion, chopped

1 Tb. Parsley

2 Cloves Garlic, minced

1 C Oysters, drained and rinsed

Pinch of Salt

Pinch of Pepper

1/2 Pinch of Crushed Red Pepper

1 Tb Lemon Juice

1/4 C Parmesan Cheese

NOTE- This recipe is for 1. To make this recipe for 2, add more pasta and oysters. DO NOT add more of the other ingredients.

Yep! Oysters! So as many of you know, I am so out of my league when it comes to sea food. I barely cook fish. I am a TRUE Mid-Western Girl! So this was a huge challenge for me. Tomithy actually found these wonderful little oysters shoved into a jar in our sea food section of our grocery store. This was the food that started the “Challenge Accepted” series. So, lets get started!

I started by heating up the olive oil in a skillet. I then added the onions and garlic and cooked until they were tender.

Next add the oysters to the garlic and onions.

Then add the parsley, salt, pepper, and crushed red pepper. Stir the oysters in the spices.

Now add the lemon juice. Cook the oysters for a total of 5 minutes or until the edges start to curl.

After the oysters are cooked, add the pasta and the Parmesan cheese. Give the mix a toss and serve.

So here is the review. Tom said it was really good, but I needed to alter the recipe. The above recipe is the “fixed” recipe. The original was a bit too spicy for Tomithy and the lemon was a little over powering. But now that these ingredients have been altered, it was a good recipe. He said it would be a good meal to break up some of the same old meal plan. It will help break up the Mid-Westerner’s food schedule!
