Ingredient List
1 Lb. Sausage
1 1/2 C Shredded Cheese (I used 1C Colby/Jack and 1/2 C Cheddar), Divided
2 C Sour Cream
1 can Cream of Celery Soup
1/2 C Onion, diced
1/2 C Red Bell Pepper, diced
1/4 Tsp. Pepper
1/2 Tsp. Salt
30 oz. Hash browns, thawed
I am always looking for yummy casseroles that I can make for breakfast. I think I came up with a pretty good one. It has lots of flavor, cheese, sausage and potatoes! What more could you want for breakfast! Here is how I made the Cheesy Sausage and Hash brown Casserole.
First start by browning your sausage. Once it is cooked all the way, remove it from the skillet and drain on a paper towel.
Next saute your peppers and onions. NOTE-I didn’t use the full amount of peppers and onions in my dish because I have picky eaters who refuse to eat anything healthy. So I just did a small amount. PLEASE PLEASE PLEASE use the full amount for the casserole…. it really helps bring this dish together.
Next mix the soup, 1 C of the cheese, sour cream, salt and pepper, sausage and hash browns together in a bowl.
Then stir in the onions and peppers. Isn’t it pretty already?
Spread the mixture into a greased 9 by 13 inch casserole dish.
Take the remaining 1/2 C of cheese and sprinkle it on top. Cover the dish with foil and bake at 350 degrees for 45 minutes.
Remove the foil and bake for another 5 minutes or until the cheese is nice and melty!
