Ingredient List
1 3/4 C Flour
1 1/2 Tsp. Baking Powder
1/2 Tsp. Salt
1/4 Tsp. Nutmeg
1/2 Tsp. Cinnamon
1/3 C Oil
3/4 C Sugar
1 Egg
3/4 C Milk
1 Tsp. Vanilla
Coating-
1/2 C Butter, melted
1/3 C Sugar
1 Tb. Cinnamon
I have been wanting to broaden my recipes for muffins over the past couple months. But to be honest, I haven’t really come up with any that I have been really proud of or found worth sharing. This one is simple to make and perfect little bite size pockets of heaven. Here is how I made these Mini Donut Muffins.
I start by mixing the flour, baking powder, salt, nutmeg, and cinnamon in a bowl.
In a separate mixing bowl, I combine the oil, sugar, egg, milk and vanilla.
Mix the dry ingredients into the wet ingredients.
Place the batter into a greased mini muffin tin. If you don’t have one of these, you can use a regular size muffin tin. But remember you will need to adjust the time that it requires to bake these.
Bake in a 350 degree oven for about 15-25 minutes or until the muffins are baked all the way through.
While the muffins are baking, prepare your coating station. Melt your butter and mix your cinnamon and sugar into a bowl and set aside.
When the muffins are cooked, remove them from the muffin tin. While they are still hot, dip them in the melted butter and then dip them in the cinnamon/sugar mixture.
Allow to cool and then keep them in an air tight container until you are ready to enjoy!
