Ingredient List
Sauce-
1/2 C Mayo
1 Tsp. Lemon Juice
2 Tsp. Honey
1 Tsp. Vinegar
1/4 Tsp. Cummin
1/2 Tsp. Paprika
1/4 Tsp. Garlic Salt
1/4 Tsp. Chili Powder
1/4 Tsp. Parsley
Fish Tacos
3-4 White Fish Fillets, cut into bite size pieces
3 Tb. Oil
1 1/2 C Flour
1 Tsp. Garlic Powder
2 Tb. Old Bay Seasoning
1 C Milk
2 Eggs
Oil Spray
Tortilla Shells
Shredded Cheese of your Choice. I like Cheddar
Fish Tacos have been in for several years now. Famous in Food Trucks and also many restaurants out there now offer Fish Tacos. I decided to save my money and make these tasty little tacos at home. Here is how I made them!
I first start with the sauce. I make this about 2-3 hours in advance so it all the flavors have time to REALLY get to know each other. I mix everything (mayo, lemon juice, honey, vinegar, cummin, paprika, chili powder, garlic salt, and parsley) together really well.
After it is blended really well, cover the bowl and place it in the fridge until dinner time. Pretty simple.
Now for the tacos. We start by setting the oven to 450 degrees. We take a lined baking sheet and place the 3 tablespoons of oil in the pan. Place this in the oven as it heats to 450 degrees.
In a bowl, mix together the flour, Old Bad, garlic powder, Salt and Pepper and set aside.
Now mix together the eggs and milk in a second bowl and set aside.
Now take your dried fillet pieces and place them into the flour mixture.
Then dredge through the milk mixture and back into the flour mixture. set aside. When all the fish has been coated, pull the HOT baking sheet that has the HOT oil on it out of the oven and place the fish in the oil. BE CAREFUL it will pop and snap.
Now take that spray oil of your choice and spray the top of the fish liberally. Place back in the oven for 15-25 minutes and be sure to flip the fish half way through the baking time.
Isn’t it nice and golden and pretty?
Now take a skillet and place a small amount of oil on it. You will then toast BOTH sides of the tortilla shell.
Now take some cheddar cheese (or cheese you prefer) and place it in the middle of the tortilla shell.
Now take some of the Spanish Rice and place it on top of the cheese.
Now top the rice with some fish.
Don’t forget about that sauce we made earlier!
Now fold or roll the tortilla shell up and enjoy. These are made for the Carnivores of my family. Some Lettuce or Cabbage may help lighten up the flavors.
