1 Box Stuffing (You can make your own if you prefer)
4 Cube Steaks
8 Slices of Bacon
Salt and Pepper
Wow! What a mouth full! This recipe is a perfect meal to either make a head and bake it later in the week or even to enjoy right away. It is cheap too! Cube steak is one of the cheapest cuts of beef you can buy. So, if you are on a tight budget but are sick of the same old thing, give this one a try.
If your cube steak is thick, place it between two pieces of plastic wrap and beat them thinner. You want thin cuts of beef here. Most cube steak is already pretty thin.
Salt and pepper the cube steak. I used more pepper than salt because the stuffing and the bacon both contain a lot of salt.
Make the stuffing according to the box instructions. If you make it from scratch that is fine also. I do not like home made stuffing. I am a generic stuffing kind of girl!
Place the prepared stuffing in the middle of the slice of cube steak.
Wrap it tightly with bacon. This will get messy. Don’t let that discourage you though! Place the stuffed steak in a lightly greased baking dish. Repeat with the other 3 steaks. You can use toothpicks to hold everything together, but I felt the bacon did a good enough job with it!
Once all the steak rolls are in the baking dish, sprinkle the rest of the stuffing on top.
Bake for 35-40 minutes at 450 degrees.
Serve with a green veggie to complete the meal!
