Italian Roasted Potatoes

Ingredient List

1 1/2- 2 Lbs. Potatoes, cubed

1/4 C Olive Oil, divided

1 Tb. Italian Seasoning

4 Cloves Garlic, minced

1 Tsp. Salt

1/2 Tsp. Pepper

1/2 C Parmesan Cheese, divided

I think it is safe to say that we all get in a rut with our cooking. The same 8 meals, over and over and over. Well I wanted to shake up dinner tonight with these potatoes. THEY ARE AMAZING!!!! Full of flavor and perfectly roasted!!!! Here is how I made the Italian Roasted Potatoes.

You start by chopping your potatoes. One thing to keep in mind is when roasting veggies is that you want all the pieces to be pretty close in size. Place the potatoes in a bowl.

Next I take half of the olive oil and drizzle it over the potatoes. Then take your Italian Seasoning, minced garlic, salt and pepper, and 1/4 cup of the Parmesan cheese and mix everything together.

Drizzle the other half of the olive oil on a baking sheet large enough that the potatoes are not bunched up or on top of each other. Place the seasoned potatoes on the pan. Place the baking sheet in a 400 degree oven and bake for 30 minutes.

After 30 minutes, take the potatoes out and give them a good toss to allow them to get roasted on all sides. Place the baking sheet back in the oven for another 15 minutes.

After the 15 minutes, take the potatoes back out of the oven and sprinkle with the rest of the Parmesan cheese and give the potatoes a toss once again. Place back in the oven for 10 more minutes. The potatoes should be done roasting after that last 10 minutes.

Give a toss and serve them up! They make a great side for any meat dish, or even just eat them by their self!
