Lambs Quarter is the amazing weed that grows in the field. Similar taste to spinach. So if you you don't have any lambs quarter, just use spinach.

Instructions
  1. Prepare your lambs quarter. If using spinach instead- thaw your spinach and wring the excess liquid from the spinach.
  2. Melt your butter and bacon grease in a skillet. Then add your minced garlic and sauté. Be sure to keep the heat medium-low. You do not want to burn your garlic.
  3. Mix the cream cheese and Parmesan cheese into the garlic until melted.
  4. Add your nutmeg and pepper to the cheese sauce. I wait to add salt until I am ready to enjoy!
  5. Mix the lambs quarter into the cheese sauce and cook for about 5 minutes until everything is heated all the way through. Serve immediately and enjoy!

One of my favorite things that we grow is Lambs Quarter. It has a very similar taste to spinach and is rich in many vitamins. If you are not fortunate to have this wonderful weed growing in your yard, just use frozen chopped spinach. I am going to take you through the steps on how to prepare the lambs quarter before I dig into the directions of the Creamed Lambs Quarter.

I usually start by re-hydrating my lambs quarter. I dehydrate it when I harvest the lambs quarter so it last longer in storage. If you are using FRESH labs quarter, you will want to still boil the leaves. It will take some of the bitterness from the leaf. I boil the leaves for about 8 minutes.

I then strain the lambs quarter. You can reserve the water and put it in your chicken coop or compost bin.

You will then take the leaves and place them in a clean dish towel and ring the extra liquid out of the leaves. Then chop the lambs quarter and you are ready to go!
