"Fat Head" Pizza Crust
Instructions
  1. Mix the mozzarella cheese, almond flour, and cream cheese. You want the cheese melted and mixed together.
  2. Remove from the heat and mix in the Xyanthum gum, salt and egg. Mix until it form a dough like texture.
  3. If the mixture gets too hard to work, warm slightly making sure not to cook the egg.
  4. Roll the dough between 2 pieces of parchment paper until you get the desired thickness and shape.
  5. Bake at 425 degrees for 12-15 minutes. Then flip the crust and bake for about 3-5 minutes.
  6. Now that the crust is made, add your desired toppings and bake until warm.

This is not my recipe, BUT I HAD TO SHARE. When you are on a low carb diet and are REALLY craving pizza, this crust is a pretty good substitute!  I was going to do a post about all the things I have found to use this recipe for but I couldn’t wait to share this recipe. Not only is this recipe Keto/Low Carb it is also Gluten Free.

When making the dough you can use a microwave or stove top. Just be sure you don’t burn the cheese. I prefer to use the stove top when making the crust. Mostly because I don’t even own a microwave.

This recipe is big enough for 2 personal size pizza. But the possibilities are ENDLESS! Look for a blog post that will be coming up with the all the ways I have found to use the dough for.
