- 3 lbs. Ground Beef
- 1 Tsp. Salt
- 1/2 Tsp. Pepper
- 1/2 Lg. Onion chopped
- 6 Slices Bacon cooked and crumbled
- 2 Cloves Garlic Minced
- 3 Eggs
- 1/2 C Mayo
- 1/2 C Milk
- 1 C Cheddar Cheese divided

- Brown the beef. Once the beef is mostly browned, I add the onions, garlic, salt and pepper to the beef and cook until translucent and tender.
- Put the beef into a lightly greased casserole dish
- Take 1/2 the cheese, eggs, milk and mayo and mix together in a bowl. Pour evenly over the top of the beef.
- Sprinkle the bacon crumbles on top of the casserole next.
- Top with remaining 1/2 cup of cheese.
- Bake in a 375 degree oven for 10-15 minutes or until baked all the way through.
- Once baked, remove from oven and allow to cool for 5 minutes.
So I have recently started a new “diet” and I am having so much fun researching and coming up with new recipes. The diet is a high protein/fat, low carb. diet. I know what you are thinking….it won’t work. Once you eat carbs again, you will gain back all that weight. Well, I don’t plan to know the future. I know this is the journey I am on now and I really am looking forward to the challenge.
Now, that being said, let me tell you about THIS recipe. It has amazing flavor. It is gluten free. And it can easily be made ahead and cooked later when you are ready to enjoy! It has little to no carbs in it as well. Here is how I made the Bacon Cheeseburger Casserole.

I made this with a few modifications (used venison + sausage instead of beef, more cheese, etc). It was delish. Hubs said I can make it once a week. 😉
