This dish is a giant casserole with lots of tender veggies. The perfect way to use up all those different varieties of veggies you grow every summer!

Instructions
  1. Cut the spaghetti squash in half and scrape the seeds out. Then, drizzle with olive oil and sprinkle salt and pepper on top. Flip the squash right side down and bake for 45-60 minutes in an oven at 350 degrees or until the squash is fork tender. Once cooked, scrape the meat from the inside of the skin. Place in a bowl and set aside.
  2. Brown sausage and drain off extra grease.
  3. Drizzle olive oil in a separate pot and saute onions. Once the onions are tender, add the garlic and cook until tender.
  4. Now add the peppers and the tomatoes to the onions and garlic. Cook until the peppers are tender.
  5. Now add the pizza sauce and cooked sausage to the pot of vegetables.
  6. Now take your prepared spaghetti squash and fold it into the pot of veggies. Cook until everything is heated.
  7. Serve and top with some Parmesan Cheese!

Every now and then I get a huge taste for a bunch of veggies mixed together with sausage and pizza sauce. But I don’t want the pizza crust. I am having a hard time coming up with a name for this dish. It is so good! Plus it is gluten free with the option of being vegetarian also! So if you come up with a title for this dish, let me know!

I start this dish with preparing and baking the spaghetti squash. I cut it in half and scrape the seeds out. Then I drizzle with olive oil and sprinkle salt and pepper on top. Flip the squash right side down and bake for 45-60 minutes in an oven at 350 degrees. You will know it is done when it is fork tender.

While the spaghetti squash is cooking, I work on the browning the sausage. When it is cooked, drain the grease off and set aside.

In a little bit of olive oil, I start sauteing the onions and garlic, until tender.

Then add the peppers and  Diced Tomatoes to the onion mix. Stir occasionally or until the peppers are cooked.

Now add the pizza sauce to the veggies. Also stir in the sausage. Bring everything up to a nice warm temperature.

Scrape the contents of the squash out and place in a bowl. Stir the other veggies into the squash.

Dish out the dish and serve with a sprinkle of Parmesan Cheese.
