Ingredient List
4 C Chopped/Peeled Potatoes
1 Small Onion, Chopped
1 TB Butter
7 Slices Bacon, chopped
5 C frozen Corn
4 C Chicken Broth
4 C Milk
1 Can Cheddar Cheese Soup
S and P to taste
The homestead is really starting to get cold. What better thing to warm up with than a nice bowl of Corn Chowder! This chowder was easy and mostly cooked in my crock pot. It took about 5 hours on HIGH once all the ingredients were in the pot. Here is how I made my Corn Chowder.
I first take about 4 cups of potatoes and peel them up and chop them into bite size pieces. I used just regular red potatoes, but you can use which ever potato you prefer.
Then I take 1 small onion and chop it really fine and saute the onions in 1 tablespoon of butter until they are translucent. Once they are cooked, add them to the crock pot with the potatoes.
Now chop about 7 slices of bacon and start browning it up. After it is browned, drain the bacon on some paper towels and then also add them to the crock pot.
Now it is time to add 5 cups of frozen corn and 4 cups of chicken broth to the crock pot.
The final ingredients are 4 cups of milk, 1 can of Cheddar Cheese Soup, and Salt and Pepper to taste. I use a lot of pepper in mine. Put the lid on the crock pot and allow to cook for about 5 hours on high or until the potatoes are cooked all the way through.
Once the potatoes are done cooking, you can dish it up and enjoy! This soup really warmed up our bellies!
