- Dry the scallops and sprinkle salt and pepper on both sides.
- Heat the bacon grease and place the scallops in the grease very carefully. Cook the scallops on both sides for 3 minutes.
- Remove the scallops when they are cooked all the way through and place it with your crumbled bacon.
- In the skillet add the butter, garlic, oregano, basil, and parsley and cook until the garlic is cooked and transparent.
- Add the scallops and bacon into the skillet just to reheat them and enjoy!
I took on another Challenge with recipes today. Tom wanted me to try my hand at some sea food. Scallops is where I decided to go with this challenge today. These scallops have a nice tender texture and were actually really easy to make. Not nearly as scary as I was thinking it would be. Here is how I made the Scallops with a Bacon and Garlic sauce.
I started by patting the scallops dry and then sprinkling the salt and pepper on top of the scallops. You can do both sides now orĀ you can season one side and then when they go into the skillet to the other side. Totally up to you.
Heat the bacon grease in a large skillet and then carefully place the scallops into the skillet. Cook the scallops for 2-3 minutes and then flip them over and cook for another 2-3 minutes. The center should be a little translucent.
Remove the scallops from the skillet and place with the crumbled bacon.
Now it is time to melt the butter in the skillet.
Add the garlic and spices to the butter. Cook until the garlic is tender.
Add the bacon and scallops back into the sauce and cook until they are warmed. It will only take a few minutes.
Serve over rice or your favorite pasta.
