Ingredient List
3/4 C Flour
1/3 C Cocoa
1/2 Tsp Baking Soda
1/4 Tsp Salt
2 Tb Butter, melted-then cooled
1 Egg
1/4 C Brown Sugar
3 Tb. Sugar
1 1/2 Tsp Vanilla
1/3 C Buttermilk
Icing
3/4 C Powdered Sugar
3 Tb Cocoa
3-5 Tb Heavy Cream
2 Tsp. White Corn Syrup
We really enjoy donuts in this household. But who isn’t? I hate not knowing what is in the food that we buy already made, so I am always working on adding more and more recipes to my cookbook where I know what my family is eating, all the while by figuring out our favorite foods. These donuts have everything you want in a donut. They are tender, yet, they hold their shape. They are flavorful, but, not over powering. Here is how I made them.
I start with combining the flour, cocoa powder, baking soda and salt. Use a whisk and fluff up the ingredients and mix them together. You can use a sifter if you prefer, but I don’t like cleaning sifters.
In a separate bowl combine the butter, egg, sugars, vanilla and buttermilk. If you do not have buttermilk, you can make your own. You can take 1/3 cup of milk and add 1 tsp of lemon juice or distilled vinegar. Mix the two together and let sit for 5 minutes. Then you can measure out your 6 tb of buttermilk. Once you have the wet ingredients mixed, combine the wet and dry ingredients together. The batter will be thick.
Prepare your donut pan by spraying it with some baking spray. I really like the coconut spray from Trader Joes.
Now that the pan is prepared and the batter is mixed, it is time to place the batter in a piping bag. I use a zipper bag for this. I, actually, lightly spray the inside of the plastic bag with the cooking spray. It helped with being able to use all the batter and not have a lot of loss batter stuck to the inside of the bag. Cut the corner of the bag off so you can pipe the batter into the prepared donut pan.
I was REALLY happy how well this worked out. Place the donuts into a 350 degree oven and bake for 8-10 minutes or until the donuts are baked completely.
Once the donuts are baked, cool for 4 minutes in the pan.
Instead of using a wire rack to cool the donuts on, I use a thick bath towel that has a piece of wax paper on top. Turn out the donuts and allow them to cool completely.
Now it is time to make the icing. Mix all the ingredients together. I start with 3 Tb of heavy cream and add more as needed until I get the desired thickness and texture.
After the donuts are cooled you can ice the donuts. I enjoyed my donut with a nice Peppermint Mocha!
