Ingredient List
1/2 C Coconut Oil
2 10.5 Bags of Marshmallows
8 C Crispy Rice Cereal (Gluten Free if necessary)
1 Tb. Vanilla
2 Tsp. Butter Flavoring
I was given the challenge of making some thing special for a dear friend who was coming over to visit. I can’t have people over and not feed them. I don’t know how to do that. I was raised that you cook for your company, even if it is just a treat! My friend and her family are Gluten Free and Dairy Free. I can do one or the other with no problem. But both? Challenge Excepted! Here is how I made the Gluten and Dairy Free Rice Crispy Treats.
I started with putting the coconut oil and the marshmallows in a large stock pot. Melt everything together until it is smooth. Remove from the heat and add the vanilla and the butter flavoring. This can take some time, so don’t rush it. Keep the heat low so you don’t burn the oil or the marshmallows.
Then add the crispy rice cereal and mix everything until it is fully combined.
In a greased casserole dish spread the mixture. Press it down with greased fingers and make sure the mix is nice and flat. Cover with foil and allow it to sit for about 2 hours or until the mix is nice and firm. Then cut them into squares and enjoy!
