Bacon Bourbon Meatballs

Ingredient List

8 Strips Bacon

1/2 Medium Onion

2 Lbs. Hamburger Meat

1 C Bread Crumbs

2 Eggs

1 Tsp. Chili Powder

1 Tsp. Salt

1 Tb. Oil

1 1/2 C  BBQ Sauce

1/2 C Water

4 Tb. Bourbon

This recipe was fast and definitely a keeper. Full of flavor and the meatballs were tender and juicy. The sauce was AMAZING! This dish pairs nicely with smashed taters! Here is how I made the Bacon Bourbon Meatballs!

I started with my food processor. I placed the bacon strips and the onion int he food processor and made a paste with the two.

In a big bowl I mixed together, with my hands, the bacon/onion paste, ground beef, bread crumbs, eggs, chili powder, and salt. Get your hands in there and combine those ingredients together.

The next step is to place the oil in the skillet and start heating the oil. Then form the meatballs into the size of a golf ball. I do this step in batches so the meatballs aren’t over crowded in the skillet.

After all the meatballs are browned on the outside, I put all the meatballs back into the skillet and then bake them at 350 degrees until the meatballs are cooked all the way through. (usually about 15-20 minutes.)

While the meatballs are baking, I make the sauce. I take my favorite sauce and put it in a sauce pan. Then add the water.  Allow the sauce to get hot and reduce down to about half. Then I remove the sauce from the heat and mix in the bourbon. Place the pan back on the heat and over low heat cook the sauce until it is the consistency you prefer.

When the meatballs are cooked, remove them from the skillet they were baked in and place them in a different skillet. This step is to remove the meatballs from the oil and grease. Then pour your sauce over the meatballs and cook for another 5 minutes. This step helps the meatballs get the chance to absorb some of that tasty sauce.

Now, all there is to do is ENJOY!
