Ingredient List
3 C Flour
1/2 C Coconut Sugar (or Regular Sugar)
1/2 C White Sugar
1 Tb. Baking Powder
1 Tsp. Salt
1/2 Tsp. Baking Soda
3/4 C Orange Juice
1/4 C Water
Orange Zest from one Orange
2 Eggs
1/2 C Butter, melted
1 1/2 C Service Berries (or berry of your choice)
1 Tsp. Vanilla
Let me tell ya a little about our week. This week, things were going as usual. Tomithy went to work, I stayed home with the kids and took care of the homestead. Tom gives me a text saying he was on his way home from work…..and he had a surprise. I’ll be honest, this made me a little nervous and excited! Well he got home and handed me his lunch bag and then he gave me his drink bottle. IT WAS FULL OF SERVICE BERRIES!!!! We have planted many Service Berry Trees on our homestead but have yet to get any berries from them. They are still too young. He was right! It was a surprise. We had never tasted Service Berries before. They taste like an apple/blueberry with some raspberry undertones… maybe… They really have an amazing flavor! So I thought, why not make some muffins for breakfast! OOOO And lets add ORANGE! Here is how I made the Orange Berry Muffins.
First I mixed together the flour, sugars, baking powder, baking soda, and salt together.
In a seperate bowl mix together the orange juice, water, eggs, zest, melted butter and vanilla.
Add the dry ingredients into the wet ingredients and give them a stir! After this step, fold in your berries to the batter.
Grease your muffin tin and fill the cups 2/3 of the way through.
Bake at 375 for 15-20 minutes or until they are cooked all the way through. Allow to cool in the muffin tin for about 5 minutes, then remove to cool on a wire rack or some wax paper with a towel under it. (We all know how I feel about wire racks….lol)
These muffins are fluffy and light! Not too sweet but still full of wonderful flavor!
