Blackberry Ice Cream with Dark Chocolate Chunks

Ingredient List

1 Pound Blackberries

1/2 Lemon, Juiced

1/2 C Sugar

1 1/2 C Half and Half

1 C Sugar

5 Large Egg Yolks

1 1/2 C Heavy Cream

Dark Chocolate Chunks

Here is another Ice Cream for your summer time enjoyment. This recipe takes many steps but it is well worth the effort. Here is how I made the Blackberry Ice Cream with Dark Chocolate Chunks.

First you will want to make your blackberry syrup. I take 1 pound of blackberries and place them in a sauce pan. Then add the 1/2 cup of sugar and the lemon juice. Over low heat cook the berries until the sugar is dissolved and the berries have been smashed. This step takes about 20 minutes.

Next you will want to strain the juice. You don’t want seeds in your ice cream. Set the juice aside.

Now it is time to make the custard. Take the half and half and the 1 cup of sugar and combine in a sauce pan. You want to heat this over a low heat and stir it continually.

Take the egg yolks and whisk them until they are light and fluffy…. usually a light yellow.

Now you will temper your eggs with the hot half and half mixture.

Then stir the egg yolk mixture back into the half and half and cook over low-medium heat until the mixture thickens. This step should take about 15 minutes.

Remove the custard from the heat and add the heavy cream and the blackberry juice to the custard. Stir until well mixed.

I then strain the mixture one more time just to be sure there aren’t any chunks. Then place the custard in the fridge until it is cooled completely.

Now it is time to pour the blackberry custard into the ice cream maker. Be sure to follow the directions for your mixer.

When the ice cream is mostly frozen, it is now time to add your chocolate chunks into the mix. Allow the ice cream to completely run the cycle and then place the ice cream in a freezer safe bowl or container to finish freezing all the way.

Scoop out and enjoy!
