6 Cups of Cooked, Chopped, and Rang Lambs Quarter (can substitute Spinach for the Lambs Quarter)
6 Tablespoons of butter
3 Eggs
1/3 Cup Parmesan Cheese
30 ounces of Ricotta Cheese
½ Teaspoon of Salt
1 Teaspoon of Pepper
2 Teaspoons of Cinnamon
More Parmesan Cheese for topping
Lambs Quarter is one of those native American weeds that you can use in place of other greens. It has a very similar taste to Spinach and is packed with iron. I use this plant to make “Spinach” Bars. I just replace the chopped spinach with the chopped lambs quarter.
The first step in this recipe is to pick all the leafs off the stem of the lambs quarter plant. Then you bring a pot of water to boil. Add your washed lambs quarter to the pot. It takes about 16 cups of raw lambs quarter to equal about 6 cups of cooked and chopped lambs quarter. It really wilts down to almost nothing. It’s a good thing its free and grows wild! After the lambs quarter has boiled for about 5 minutes, I drain the lambs quarter and rinse and rinse with cold water. Like a lot of greens, lambs quarter can be a little bitter. The rinsing stage is very important to remove the bitterness.
Your next step is to take about half of the lambs quarter in a clean dish towel and pull up the corners of the towel and make a ball.
Next, ya start wringing. You squeeze that lambs quarter and get as much liquid out of the leafs as possible.
You need to take 6 tablespoons of butter and start melting it down while you chop your lambs quarter. After the leafs have been chopped you saute the leafs for 3 minutes in the butter to coat the leafs. After 3 minutes, remove from heat. In a separate bowl mix 1/3 Cup of Parmesan cheese, 30 ounces of Ricotta cheese, 3 eggs, 1/2 teaspoon of salt and 1 teaspoon of pepper, and 2 teaspoons of cinnamon. After this is well combined, add it to the lambs quarter.
Pat the mixture into a lightly greased 9 by 13 inch casserole dish. And bake at 400 degrees for 25 minutes. Remove the casserole and then top with Parmesan cheese and bake for another 10 minutes.
Cool the spinach bars and cut into squares. Enjoy!
Lambs Quarter Bars
6 Cups of Cooked, Chopped, and Rang Lambs Quarter (can substitute Spinach for the Lambs Quarter)

3 Eggs
1/3 Cup Parmesan Cheese
30 ounces of Ricotta Cheese
½ Teaspoon of Salt
1 Teaspoon of Pepper

More Parmesan Cheese for topping
-Boil, wash, drain, and ring your lambs quarter. Then Chop
-Melt 6 Tablespoons of butter in a large skillet.
-In a separate bowl mix the Parm., ricotta cheese, eggs, salt and pepper, and cinnamon.
-Saute the chopped spinach in the melted butter.
-Turn off the heat.Mix in the cheese mixture.
-Place in a lightly greased casserole dish and press evenly.
-Bake at 400 degrees for 25 minutes.
-Take casserole out of the oven and top with extra Parmesan cheese. And cook for another 10 minutes.
-Let the bars cool and then cut them and enjoy!
