Ingredient List
Crust:
3 C Flour
1 1/2 C Powdered Sugar
1 1/2 C Butter, melted
Lemon Curd:
6 Eggs
3 C Sugar
1 1/2 Tsp. Baking Powder
1/2 C Flour
1/3 C Lemon Juice
Zest from 2 Lemons
Powdered Sugar for Dusting
Tomithy Loves All Things Lemon! Lemon squares just happen to be what I made for him today. These squares are light and flavorful and will not disappoint. Here is how I made them.
The crust is the first step. It is really simple. Just take the 3 cups of flour, 1 1/2 cups of melted butter and 1 1/2 cups of powdered sugar and mix them all together.
Then you take the mixture and press it into a lightly greased 9 by 13 inch casserole dish. Place in a 350 degree oven and bake for 15 minutes.
While the crust is baking, you will want to make the lemon curd. I start by using my stand mixer with the whisk attachment and start whipping the 6 eggs. Then in a separate bowl I mix together the sugar, baking powder, 1/2 cup of flour. When these ingredients are mixed, toss them in the mixer with the eggs. Then take your lemons and zest and then juice them. Once the sugar mixture is incorporated into the eggs, add this juice and zest mixture.
The crust should be done (or close to it). It will be lightly browned around the edges.
Pour the lemon curd right on top of the hot crust. Place back into the 350 degree oven and bake for 45 minutes.
Once the lemon squares are baked, allow to cool for at least 1 hour so the curd has time to set. Dust the top with powdered sugar and cut into squares and enjoy!
