1 Box of your favorite stuffing, prepared (or you can make your own)
2-3 C Cooked Chicken, chopped
12 oz Cream of Chicken Soup
1 C Milk
1 C Cheese, shredded, Cheddar or Colby
2 C Steamed Broccoli
1/2 C Fried Onions
Salt and Pepper to Taste
This is a great make a head meal. You can get it all prepared ahead of time and then throw it in the oven when you are ready to enjoy. It is also a great dish to take to a family who needs a pick me up after losing a loved one or welcoming a new family member. Also a great dish for the elderly. So many times I have needed a dish to take to someone for one of the reasons or another. This dish can get thrown together fast and it is tasty also. It is a great recipe to use up some of that rotisserie chicken you had the night before. This is how I made the Chicken and Broccoli Casserole.
I took a 9 by 13 inch casserole dish and put the soup and the milk in the bottom and whisked them together until it was combined really well.
I then took my chopped chicken and placed it in the milk mixture.
Next comes the broccoli. NOTE- If I was making this for a less picky crowd, I would have chopped the broccoli up smaller so it was easier to eat. Tom isn’t a huge fan of the flavor green so I left the broccoli pieces bigger for him.
Now take your prepared stuffing. I just used a box of stuffing but if you wanted you could make it from scratch and just use about 4 cups. Scatter the stuffing over the broccoli and chicken layers.
Next take the fried onions and the cheese and scatter on top of the casserole. I used Cheddar cheese but I think Colby would taste fantastic as well.
IF I WAS GOING TO MAKE THIS DISH FOR THE FUTURE, I WOULD STOP HERE!
Place the casserole in the oven COVERED with foil and bake for 30 minutes at 400 degrees. Remove the foil the last 5 minutes of baking.
