Ingredient List
4-8 Boneless Pork Loin
Marinade-
1/2 C Soy Sauce
1/4 C Olive Oil
1 Tb. Garlic Powder
1 Tb. Onion Powder
1 Tb. Parsley
1/2 Tb. Paprika
1/4 Tb. Crushed Red Pepper
Dry Coating-
1/2 C Bread Crumbs
1 C Parmesan Cheese
1 Tb. Italian Seasoning
Other Ingredients-
1-2 Eggs
1/2 C Flour
2 Tb. Butter
This is one of those recipes that you can prepare over the weekend and finish up on the week night. It is fast and easy and full of flavor.
I first take all the ingredients for the marinade and mix them together in a bowl. There isn’t an exact science to this. Just dump and mix!
Then I take my pork and place them in a gallon size zipper plastic bag. Pour the marinade over them and seal the bag. Coat the pork with the marinade and place them in the fridge for at least 1 hour.
Now to make the coating all you need to do is mix the bread crumbs, Parmesan Cheese, and Italian Seasoning.
After your pork has marinaded, you need to set up your coating station. Put the flour in the first bowl, the egg in the second, and then have your dry crumb coating in the last. You will take the pork out of the marinade and dredge it first through the flour. Make sure it is fully coated with flour. Then dredge the pork into the egg. Then dredge through the cheese and bread crumbs. If you wanted to cook these at a later time, I would then place them either in a clean plastic zipper bag or place them on a plate and wrap with plastic wrap. Really make sure the prepared pork is sealed well. Then place in the fridge for up to 2 days.
You will now want to heat up the olive oil in the oven safe skillet or pan. You will want the oil to be hot enough to sizzle but not too hot that it burns the crust. Do not move the pork around a lot in the pan. Too much movement will cause the coating to come off. You aren’t cooking the pork on the stove top. Just browning the coating. You will need to flip them one time.
Once the pork is browned on both sides they are ready to be placed in a 350 degree oven.
Cover your oven safe skillet with foil so it locks in the moisture while the pork cooks. And then place in the oven and bake for about 30 minutes. The length of cook time really depends on how thick your pork is. Just be sure to cook the pork until the internal temperature is 145 degrees.
Allow the pork to rest for 3 minutes before you consume it. This is a hard part for me. It is so tasty! I hope you enjoy this recipe!
