So this is going to be a little bit different post than I would normally do. It doesn’t have measurements. It really isn’t a “How To” as much as it is a “Here’s an idea” type of post. If you are anything like me, you probably have left over taco meat but you do not want tacos again for dinner. So you have some options. 1- You can freeze the taco meat. It actually freezes really nice. 2- You can feed it to your dogs. 3- Hide it in the back of the fridge until it grows some fur and is known as the “weird stuff in the old butter dish”. Or 4- Turn it into something else. So this is how we use up some of that left over taco meat.

First start by heating your oven to the appropriate temperature for your tater tots. All tatter tots are NOT created equal. They all have different instructions. I like to cook my tots a little bit longer than most. I want a nice crunchy outside and a soft inside. This helps the tots not to get soggy with the toppings.

Next, heat up the left over taco meat. We don’t have a microwave so I do this on the stove. Again, do this the way that works best for your household!

After the tots are baked to a nice crisp, top with the desired amount of cheese. Place back into the hot oven and melt the cheese.

Now it is time to assemble! Tater tots in the bowl first. Then taco meat. Then sour cream. Some yummy options to add to this would be guacamole, salsa, or sauteed veggies!

This is a pretty easy dish. And one of our FAVORITE ways to use up left over taco meat!
