Banana Oat Mini Muffins

Ingredient List

1 C Greek Yogurt

3 Medium Ripe Bananas

2 Lg Eggs

2 C Oats (or 1 1/4 C Oats and 3/4 C Flour)

1/4 C Brown Sugar

1 1/2 Tsp Baking Powder

1/2 Tsp. Baking Soda

1/2 C Mini Chocolate Chips

This recipe is actually made in a food processor. It goes together pretty fast and has the option of being Gluten Free. These muffins are pretty healthy for you and are fantastic way to start the day! Here is how I made the Banana Oat Muffins.

First get your food processor out. Start by blending your oats. If you are using all oats that is fine. If you are doing the combo of oats and flour, mix them together. Then mix in the baking soda,  and baking powder.

After the dry ingredients are mixed it is time to add the wet ingredients. Add the bananas, Greek yogurt, eggs and brown sugar to the food processor.

Pour the mixture into a bowl and stir in the mini chocolate chips by hand.

Grease your mini muffin tin and add the batter to the tin. If you do not have a mini muffin tin, that is ok! You can use a regular size muffin tin. Just increase the baking time.

Bake the muffins in a 375 degree oven for 15-25 minutes or until they are baked all the way through.

Allow the muffins to cool and then you can enjoy them or keep them in an air tight container to enjoy later!
