Ingredient List
15 oz. Kidney Beans, rinsed
30 oz. Black Beans, rinsed
1 Onion, chopped
1 C BBQ Sauce
1 Tb. Garlic Powder
1 Tb. Worcestershire Sauce
1/2 C Brown Sugar
2 Tsp. Chili Powder
2 C Tomatoes, Diced (I used these)
1 C Green Pepper, chopped
1 C Roasted Red Pepper, chopped
1 Smoked Sausage (1 ring), chopped
I was looking for a meal that was easy to throw together and had great flavor. I wanted it to be a crock pot meal and also have the benefit of using what I have in the house. I really didn’t want to have to go to the store. So while I was going through the freezer and canning shelves, this recipe kind of came together in my mind. It started with just beans and smoked sausage and then morphed into this AMAZING and EASY dinner. Here is how I made the BBQ Sausage and Bean Dinner.
I started with prepping my ingredients. Chopping the onions and peppers, rinsing the beans, and throwing it all into a crock pot.
I then added the sausage and gave it a gently stir. Now it is time to mix in the bbq sauce, garlic powder, Worcestershire sauce, and chili powder. Stir it into the mix and cover and cook on high for 4 hours or low for 6. You are wanting to cook the onions and peppers down. Make sure they are tender.
If your beans are too soupy for you (like mine were) during the last hour, vent the lid on the crock pot. It allows the moisture to escape and gives you the texture of the dish that you are looking for.
You can serve it as a side or as a main dish. We enjoyed ours with some Homemade Corn Bread.
