Ingredient List
2 Tb Butter
1/2 C Onion, chopped
2 Cloves Garlic, minsed
12 oz. Ham
1 C Chicken Stock
19 oz Frozen Tortellini
1 C Frozen Sweet Peas
1/2 C Heavy Cream
1 C Monterrey Jack, shredded
1/2 C Mozzarella Cheese, shredded
As many of you know, I am always looking for fun recipes that will feed the family for a reasonable price. This recipe has all the criteria that I like to go by when picking meals. 1-Feeds the family 2-Veggitables 3-Carb 4-Tasty!
Here is how I make Ham and Cheese Tortellini.
I melt the butter in a sauce pan and add the onions to the butter to saute. Cook the onions until they are nice and tender. Then add the garlic and saute until translucent. Be careful not to burn the garlic.
After the garlic and onions are cooked, add the chicken stock, cream, tortellini, and ham. Give everything a good stir and simmer for about 5 minutes.
Now you will want to add the peas and the cheese. Give everything a good stir.
I then place the mixture in a casserole or baking dish. I, actually, found that a loaf pan works great. Bake it at 350 degrees for 15 minutes.
When it is done baking, serve it up and Enjoy!
