Cranberry Orange Oatmeal Cookies

Ingredient List

3 Oranges, Zested

1 C Butter

1 C Brown Sugar, packed

1/2 C White Sugar

2 Eggs

1 Tsp. Vanilla

1 1/2 C Flour

1 Tsp. Baking Soda

1 Tsp. Cinnamon

1/2 Tsp. Salt

3 C Old Fashion Oats

1 C Dried Cranberries

1 C White Chocolate Chips

I have a confession to make. I LOVE COOKIES! Especially THESE cookies. They have a bright flavor from the orange zest, the tang from the cranberries and the sweet from the white chocolate. I, first, tasted these cookies at one of my favorite coffee houses. The first bite in and I knew I had to come up with this recipe. So after several attempts, I think I have it. Here is how I made theses Cranberry Orange Oatmeal Cookies.

I start by combining the flour, oats, baking soda, salt, cinnamon, and dried cranberries. I really like the orange infused cranberries from Trader Joes.

In a seperate bowl, I cream together the sugars and butter. Then add the orange zest, eggs and vanilla. Mix them all really well.

Combine the dry ingredients into the wet ingredients. Then add in the white chocolate chips.

I use a large cookie scoop (about a 2 tablespoon measure) and place the cookie dough on the silicon lined baking sheet. If you do not have silicon baking sheets, USE PARCHMENT PAPER! These cookies will want to stick to metal baking sheets.

Bake the cookies for 12 minutes in a 350 degree oven. Allow them to cool on the baking sheet for 2 minutes before removing to cool the rest of the way.

Once the cookies are cooled, store them in an air tight container. Enjoy!
