Muffin
3 C Flour
2 Tsp. Baking Powder
2 Tsp. Baking Soda
1 Tsp. Salt
1 Tsp Cinnamon
1/2 Tsp. Ginger
5 Lg. Ripe Bananas
3/4 C Coconut Sugar
3/4 C White Sugar
2 Eggs
2 Tsp. Vanilla
2/3 C Coconut Oil
Crumb Topping
2 C Chopped Pecans
2 Tb. Flour
2 Tb. Cinnamon
2 Tb Brown Sugar
Coconut Oil Spray
These muffins are different than your typical Banana Muffins. They have more of a harvest spice flavor to them. The topping adds that nice little crunch to each bite! Here is how I made the Spiced Banana Muffins.
I start by combining the dry ingredients in a bowl. Mix flour, baking powder, baking soda, salt, cinnamon and ginger with a whisk until everything is light and mixed well.
In the bowl of your stand mixer (or a separate bowl) mix the bananas, sugars, eggs, vanilla and coconut oil. Then mix the dry ingredients into the wet ingredients until the ingredients are combined. Do not over mix!
I use coconut oil spray to spray each muffin hole. You can use papers if you like. Then I use an Ice Cream Scoop to scoop the batter into each hole.
I combine all the crumb topping ingredients into a separate bowl (except for the cooking spray) and then add the crumble to each muffin.
After each muffin has the crumble on top of them, I use the coconut oil spray and lightly spray the crumble. This give the crumble a nice coating with out the extra fat from the butter that would typically be added to the muffins. Bake at 325 degrees for about 15-20 minutes or until the muffins spring back after you touch the center. The time will depend on your oven.
Allow the muffins to cool for about 5 minutes in the tin and then remove the muffins to allow them to cool the rest of the way. Keep in an air tight container until you are ready to enjoy!
