Healthier Zucchini Bread

Ingredient List

3 C Flour

1 Tsp. Salt

1 Tsp. Baking Soda

1 Tsp. Baking Powder

2 1/2 Tsp. Cinnamon

1/2 Tsp. Ginger

2/3 C Sugar

2/3 C Coconut Sugar

2/3 C Brown Sugar

1 C Coconut Oil

3 Eggs

2 Tsp. Vanilla

2 C Zucchini, shredded

I know what you are thinking. Healthier zucchini bread? It has sugar in it! Yes, you are right. I didn’t say it was HEALTHY… I said it was HEALTHIER. So yes it has sugar…but it has less white and brown sugars in it and has been replaced with coconut sugar. It also doesn’t have vegetable or canola oil in it. It has Coconut oil. These things help make this bread be healthier. Here is how I made this Zucchini Bread.

I, first, mixed the flour, salt, baking soda, baking powder, cinnamon and ginger together.

In my stand mixer, I combine the sugars, oil, eggs, and vanilla together.

Mix the dry ingredients with the wet ingredients. Don’t over mix. You don’t want your bread really dense.

Mix the zucchini into the batter.

Separate the batter into 2 loaf pans that have been sprayed with cooking spray. I really like the coconut oil spray. If you haven’t tried it yet, you should!!! Bake in a 325 degree oven for about 45-65 minutes (depending on the accurate temp of the oven and how large or small your loaf pans are).

When the knife or tooth pick comes out of the middle of the bread clean, you know the bread is finished baking. Allow the bread to cool. You can wrap the bread up in plastic wrap or zipper bags. This will help the bread last longer. This bread is also very freezer friendly. You can make it now and enjoy it later!
