Ingredient List
2 C Flour
1 Tb. Corn Starch
1/2 Tsp. Baking Soad
1/4 Tsp. Salt
3/4 C Butter, softened
1 C Brown Sugar
1/2 C Coconut Sugar
2 Eggs
2 Tsp. Vanilla
3/4 C White Chcolate Chips
3/4 C Macadamia Nuts, chopped
Macadamia Nut cookies are one of those “Oldie but Goodie” cookies. They are simple yet they have a hint of exotic. Macadamia Nuts, to me, have a fresh and light buttery flavor with a hint of coconut….if that makes any sense. Here is how I made the cookies
I first combined the flour, corn starch, baking soda and salt and whisked it slightly in a bowl. Set aside.
Chop your nuts and set them aside.
In a stand mixer, or a separate bowl if you don’t own a stand mixer, cream together the butter, eggs, vanilla, and sugars.
Add the dry ingredients into the wet ingredients.
Then add the chopped nuts and the white chocolate chips and mix until combined. Place in the fridge for 2 hours.
Bake at 325 degrees for 8-10 minutes.
Cool on wax paper or on a wire rack. I will say these cookies look darker than they are baked. The coconut sugar gives them a darker look in color but they are not over cooked or crispy. I promise!
