Ingredient List
3 C Cold Mashed Potatoes
1 C Cheddar Cheese
1/3 C Flour
6 Strips of Bacon, cooked and crumbled
1/2 Onion, Chopped
3 Eggs
1 Tb Basil
1 Tb Parsley
2 Cloves Garlic, minced
1 Tsp. Salt
1/2 Tsp. Pepper

Who doesn’t love potato cakes? I purposely make extra mashed potatoes so I can make these for a future meal. I know that might sound like madness but i strongly suggest that you try these fluffy cakes a try!
Then I reserve 2 tablespoon of bacon grease and I saute the onions and garlic over low-medium heat. Add the garlic after the onions have started to become translucent.
I use my stand mixer for this next part. I throw everything in the mixing bowl and use the paddle attachment to mix everything up.
Melt some butter in a skillet and place your potato mush in the skillet. You will want to use a low to medium heat because you want the cakes to cook all the way through without burning the outside. Do not do a lot of flipping or your cakes will fall apart before they have set up.
You can top these with sour cream or ketchup or just enjoy them plain! I just grab and go with these little devils. They are crusty on the outside and warm and fluffy on the inside!
