Ingredient List
1/2 C Cocoa
1/4 C Cornstarch
3 Egg Yolks
1 1/2 C Sugar
1/4 Tsp. Salt
2 C Milk
1 Tsp. Vanilla
Who doesn’t enjoy pie? I know our house is always looking for reason for pie. Today was what all pie lovers dream of. PI DAY!!!! On March 14th we celebrate Pi….or Pie… because of Pi= 3.14159 or 3-14….get it? Anyway, so every year on March 14th we make a pie to celebrate Pi Day. It may be a nerd thing… but we REALLY enjoy this day! Here is the Pie we made this year.
This recipe is pretty simple. First you take the cocoa powder, cornstarch, sugar and salt and combine it all in a heavy bottom sauce pan.
We use a whisk! After those ingredients are combined we add the egg yolk and the milk. We turn on the heat to a medium to low heat and stir continuously. Home made pie is very touchy and it will want to burn so the best method is low and slow!

About half way through he cooking process, we switch to a rubber spatula so we can really scrap the sides and bottoms of the pan. The filling will really start to thicken. Once it is really thick, turn off the heat and add the vanilla. Stir the vanilla in completely.
Now that the filling is cooked to the right thickness, you will take your prepared pie crust that has already been baked, and add the filling.
As tempting as it might be, you need to allow the filling to cool completely before digging in otherwise your pie will be soupy and not firm.
See, the pie is cooled completely and it came out in one piece! Aren’t you glad you waited? You can eat your pie plan or add some whipped cream to the top. Either way, you will really enjoy this rich and silky pie!
