Spaghetti Squash with Bacon and Spinach

Ingredient List

1 Spaghetti Squash

1/2 Onion, chopped

1 Garlic Clove, minsed

Olive Oil

1/2 C Cooked Lambs Quarter (or spinach)

4 Slices Bacon, Chopped

Butter

Salt and Pepper

2 C Ricotta Cheese

Nutmeg

Cinnamon

Parmesan Cheese

Spaghetti Squash has so much potential! You can literally put anything with it and it taste FANTASTIC! I chose to make my spaghetti squash with ricotta, bacon and lambs quarter (you can use spinach in place of the lambs quarter) Here is how I made this bowl of happiness.

Start by cutting your spaghetti squash in half and remove all the seeds. Rub some olive oil on the insides and salt and pepper them.

Then place them insides down on a baking sheet that was lined with a silicone mat or parchment paper. Give the skin a few poke holes with your knife and put them in a 400 degree oven to cook. It will take about 35-60 minutes. Depending on your oven and the size of the squash. When the squash is tender, it is finished.

While the squash is baking, I prepare my other ingredients.

The squash will be very tender when it is ready. I allow mine to cool a bit before I remove the insides from the skin.

While the squash is cooling a bit, I take 2 tablespoons of butter and the onions and cook them in a skillet. When the onions are cooked and tender, I add the garlic to saute.

After the garlic and onions are sauteed, add the bacon and the lambs quarter to the skillet with another tablespoon of butter and about 1 tablespoon of Olive oil.

Next mix the ricotta cheese to the mix and cook on a medium low heat.

While everything is cooking in the skillet, remove the inside of the squash from the skin with a fork and place into a bowl.

Now mix the squash in with the cheese and lambs quarter mixture. Sever it up and eat.

So many options at this point. You can just add Parmesan to the top and eat it like this. Or you can add diced tomatoes or spaghetti sauce and enjoy. Or stuff shells with this mixture or add to a casserole. So many options. How do you enjoy your spaghetti squash?
