1/2 Lb. Bacon

6-7 Eggs
3/4 C Cheddar Cheese
Merry Christmas Everyone! I wanted to share our families Traditional Christmas Breakfast. We enjoy this every year! It is so easy to throw together so you don’t have to miss out on the Christmas Morning Fun! You can even make some of it ahead for even easier assembling. Here is how I make it!
I first start by browning 1/2 pound of breakfast sausage. After it is cooked all the way through, I drain it on some paper towels.
Then I cook 1/2 pound of bacon and drain it on some paper towels as well.
After both the sausage and the bacon have drained, I chop the bacon and mix with the sausage and set aside. This is a step you can do a day or two before. It makes less mess and less prep time on the day of Christmas.
I then lightly grease a 9×13 inch casserole dish and then place 1 tube of crescent roll dough into the bottom of the dish. Be sure to smash the seams together to fully cover the bottom of the dish.
Next I take 6-7 eggs and scramble them with some salt and pepper. Now- This is where you could get REALLY creative if you have adventurous eaters. You could scramble the eggs with some chopped peppers or onions or mushrooms even. It is your breakfast, make it how you like it. (If you decide to add those things to the scrambled eggs, be sure to chop them ahead of time.)
Now take your mixture of meat and top the scrambled eggs.
Now the final step. Take about 3/4 cup of cheddar cheese and sprinkle on top. Again, if you have adventurous eaters, you could used some Pepper Jack cheese or Monterrey Jack cheese. Or a mixture of cheese. My family prefers to keep it simple
Bake in the oven at 350 degrees for about 30 minutes or until the egg and dough are cooked all the way through. Allow the dish to cool for about 5 minutes before cutting the casserole.
Then cut the casserole into pieces and serve. Some fun things you can do is add sour cream, salsa, or even parsley or chives to give it an extra kick of flavor.
I hope you enjoy this easy Christmas Breakfast.
Have a Merry Christmas!
