Apple Bread

Ingredient List

8 cups of chopped apples

2 tablespoons of lemon juice

3 tablespoons of brown sugar

2 tablespoons of cinnamon

2 eggs

1/3 cup coconut sugar

1/3 cup white sugar

1/2 cup coconut oil

1/2 cup sour cream or Greek yogurt

2 teaspoons vanilla

2 cups flour

2 teaspoons baking soda

1/2 teaspoon salt

2 cups cinnamon chips

A family favorite around the homestead is apples. We have a tendency of acquiring more apples than I know what to do with. So on days that this happens, I come up with a lot of different recipes. Some are amazing and some are complete flops. But, that is one of the fun things about making up recipes, figuring out which one works the best.

The first step is washing and chopping the apples. Since this is home made, I don’t worry too much about uniformity. Just give the apples a rough chop. As I chop the apples, I toss them  in about 2 tablespoons of lemon juice just to keep them from turning brown and mushie while I’m chopping them up. This is about 8 cups of apples.

After the apples are chopped, I mix 3 tablespoons of brown sugar and 2 tablespoons of cinnamon into the apple chunks. The lemon juice also helps with allowing the sugar and cinnamon to coat the chunks of apple. Set them aside when they are fully coated.

Now take 2 large eggs (I used 3 small/medium eggs), 1/3 cup of Coconut Sugar and 1/3 cup of White Sugar (You can use all white sugar, but I like to use the coconut sugar to make it a little healthier for our family), 1/2 cup of Coconut Oil, 1/2 Cup Sour Cream or Greek Yogurt, and 2 teaspoons of Vanilla and place it into the bowl of your stand mixer and combine the ingredients.

As the wet ingredients are mixing, in a separate bowl, combine 2 cups of Flour, 2 teaspoons of baking soda, and 1/2 teaspoon of salt. Then stir the dry ingredients into the wet ingredients until combined. Do not over mix.

These tasty little morsels are called Cinnamon Chips. I mix 2 cups of the chips into the combined dough.

Now fold in about 7 cups of the apples. Be gentle. You don’t want to bruise the apples during this process.

Now place the batter into greased loaf pans. Then top the batter with the left over apples, pressing them into the top gently. Place in a preheated oven at 350 degrees and bake for 50-60 mins. or until they are cooked through completely. I then allow them to cool in the pan for about 10 minutes before removing.

This bread makes a wonderful breakfast. It is also a great bread to share with neighbors.  I hope you enjoy it as much as our family has.
