Ingredients
- 4 Lg Eggs
- 4 oz. Cream Cheese softened
- 4 Tb. Butter softened
- 2 tsp. Lemon Extract
- 2 tsp. Lemon Zest
- 1 1/4 C Almond Flour
- 2 tsp. Baking Powder
- 1/4 tsp. Salt
- 5 Tb. Monkfruit Sweetener or sweetener of your choice

Instructions
- Preheat oven to 350 degrees.
- Cream together the cream cheese, butter, lemon extract, lemon zest, and sweetener.
- Add the almond flour, baking powder and salt. Stir well.
- Pour batter into a lightly greased loaf pan.
- Bake for 35 minutes or until the cake is completely baked.(Around the 20 minute mark, place a piece of foil on top of the loaf pan to keep the top of the cake from browning too much)
- Cool in the pan for 10 minutes. Then remove the cake from the pan and cool on a wire rack.
- Top with some yummy fruit and some home made coconut cream whipped cream!

The macros are for the cake alone. The macros I have for my specific brands and ingredients are Calories-152, Fat-13g, Total Carbs.-9.5g, Net Carbs.-3g, Protein-6g. Depending on your ingredients and brands that you use, the macros will change. But this, at least, gives you a place to start.
