Instructions
  1. Mix together the cream cheese, eggs, vanilla and melted butter.
  2. In a different bowl, mix together the sugar, coconut flour, and baking powder.
  3. Mix the dry ingredients into the wet ingredients. Let sit for 5-10 minutes.
  4. Pour the batter into the waffle iron. Follow the measurements and instructions for your waffle iron. It will take approximately 2-3 minutes to cook the waffles....depending on your iron.
  5. Top the waffles with your favorite toppings.

Can I just say that we have tried MANY MANY different types of Keto Waffles and Pancake recipes. And this one definitely takes the cake! My whole family says that these waffles taste exactly like Waffle House Waffles! They are light and fluffy and simply just PERFECT!

Start by mixing together the cream cheese, eggs, vanilla and melted butter. In a separate bowl, mix together the coconut flour and the baking powder. Mix the dry ingredients into the wet ingredients. I let it sit for about 5-10 minutes.

Pour the batter into the waffle iron that has been sprayed with coconut oil. Follow the measurements and instructions for your waffle iron. It will take approximately 2-3 minutes to cook the waffles….depending on your iron.

So I made a huge batch of waffles and decided to freeze them for an easy breakfast for early morning school days. After I made the waffles, I laid them out on wax paper in a single layer. I placed them in the freezer for about 10 minutes. When I had the next batch ready, I placed another piece of wax paper on top of the first layer of waffles and laid the next layer of waffles on top. I repeated this until all the waffles were frozen completely. After they are frozen, I placed the waffles in a zipper bag. When we are ready to use the waffles, you can use a microwave to reheat them. I use a toaster oven.

Our favorite way to top the waffles is either with Sugar Free Maple Syrup or Strawberries mixed with some Mascarpone Cheese!
