- 1 Tb. Olive Oil
- 16 Oz. Frozen Chopped Broccoli
- 24 Oz. Frozen Riced Cauliflower
- 1 1/2 C Heavy Whipping Cream
- 3 1/2 C Cheddar Cheese divided
- 1 1/2 Tsp. Dijon Mustard
- 1 Tsp. Onion Powder
- 1/4 Tsp. Salt
- 1/8 Tsp Pepper

- First start by spreading your frozen broccoli and riced cauliflower on a lightly greased baking sheet. Drizzle with olive oil and sprinkle the salt and pepper on top. Bake at 400 degrees for 10 minutes.
- Take the broccoli and cauliflower out of the oven, toss and continue baking for another 5-10 minutes.
- While your veggies are cooking, it is time to make the cheese sauce. Combine the Heavy Whipping Cream, 3 C of cheese, Mustard, and Onion Powder together. Bring the heat to a medium low and heat the sauce until everything is melty and wonderful.Do not burn the sauce. Stir continuously.
- Lightly grease a 9 by 13 casserole dish. Mix the cheese and the veggies together and spread the mixture in the dish.
- Spread the remaining cup of cheese on top. Cover with foil and bake for 20 minutes at 400 degrees. Remove the foil and bake for another 10 minutes.
- Allow the casserole to cool slightly! (mostly so you don't burn your tongue)
Family gatherings call for lots and lots of yummy food. Some of the items that my family brings aren’t exactly Keto friendly. So, I took matters into my own hands for a Keto friendly side dish that everyone would enjoy. And boy did they! There was no leftovers!!! I’ll be honest, I was a little sad by that, but so glad everyone enjoyed it! Here is how I made the Keto Broccoli Cheese and Cauli “Rice”!
