Ingredient List
15 oz Pumpkin Puree
4 Eggs
1 C Coconut Oil, softened
2/3 C Water
2 C Sugar
1 C Coconut Sugar
3 1/2 C Flour
2 Tsp Baking Soda
1 Tsp Salt
3 Tsp Pumpkin Pie Spice
I honestly can’t think of another sweet bread recipe that I love more than Pumpkin Bread. My favorite Autumn bread. The way it makes my home smell is DIVINE!
I first start by combining the dry ingredients. I whisk together the flour, baking soda, salt and pumpkin pie spice.
In my stand mixer I combine the wet ingredients. Mix the pumpkin puree, eggs, oil, water and sugars together.
Then mix the dry ingredients into the wet ingredients. This makes 3 standard loafs. I only had 2 loaf pans, so I used an aluminum pan for the third pan. Be sure you grease the pans really well. Bake at 350 degrees for 45-50 minutes or until the are fully baked in the middle.
Allow them to cool for about 15 minutes, and if you want, you can remove the bread from the loaf pans to cool the rest of the way on a wire rack. I don’t usually remove my bread from the pan to cool. It is totally up to you!
You can add some butter or eat it plain. The bread is wonderful both ways!
