Pumpkin Spice Cookie Bars

Ingredient List

1 C Butter, Room Temp

1 1/2 C Sugar

6 Tb Pumpkin Puree

2 Eggs

1 1/2 Tb Vanilla

5 C Flour

3 Tsp. Cream Of Tarter

1 1/2 Tb Pumpkin Pie Spice

1 Tsp Baking Powder

1 Tsp Baking Soda

3/4 Tsp Salt

Icing-

1/2 C Butter, Softened

2 1/2-3 C Powdered Sugar

3 Tb Pumpkin Puree

1/2 Tb Pumpkin Pie Spice

These cookie bars are full of flavor! Pumpkin Pie Spice flavor that is! The cookie is nice and soft and the icing is fantastic! NOTE- I will say that the next time I make these cookies, I will be making them in a larger pan. I used a 9 by 13 inch pan, but I think a larger pan (11 by 15) would be better. It would make a thinner cookie. Plus it would take less time to bake as well. Instead of the 15-20 minutes at 350 degrees, I would only cook it 10-13 minutes (and maybe even at 325 degrees. I will make them again, some day soon, and let ya know how they turn out.

I start with creaming the sugar and butter in my stand mixer.

Then I add the pumpkin, eggs, and vanilla.

In a different bowl, I mix together the flour, cream of tarter, pumpkin pie spice, baking powder, baking soda, and salt. Whisk it together until it is well incorporated.

Then mix the dry into the wet ingredients. It should be the consistency of cookie dough.

I pressed it into a greased 9 by 13 inch pan. (Like I mentioned earlier, if you want a thinner cookie, use a 11 by 15 inch pan and cook at 325 degrees.) Bake the cookie in a 350 degree oven for 15-20 minutes.

After the cookie has cooled completely, it is time to make the icing. I mix together the butter, pumpkin pie spice and the pumpkin puree.

Then add the powdered sugar until you get the desired consistency.

Now just spread the icing onto the cooled cookie. Cut into squares and enjoy!
