Everyone needs a basic Chocolate Chip Cookie Recipe in their recipe book. These cookies are sure to be a sweet, warm and soft cookie you remember from Grandma’s House. That is if your Grandma is an awesome cook like my Grandma was.) These cookies are your basic cookie with one special ingredient, Corn Starch. A little corn starch is the key to making these cookies soft and chewy.
First take 3/4 Cup Sugar, 3/4 Cup Brown Sugar, 1 Cup Softened Butter, 1 Egg, and 1 Teaspoon Vanilla and place them in your stand mixer.
Then you cream and cream and cream those ingredients!
In a separate container add 2 1/4 Cups Flour, 1 Teaspoon Baking Soda, 2 Teaspoons Corn Starch, and 1 Teaspoon Salt.
Some would tell you to sift those ingredients together. Not me, I’m gonna tell ya to grab that whisk and go to town! Really incorporate those dry ingredients together. Now you want to ad the dry ingredients into the wet. WARNING– Be sure to cover the bowl of the mixer with a damp towel before turning on the mixer otherwise you will have a cloud of flour in your face. Yep! You Guessed It, I learned that the hard way! Then take those chips and fold them into the dough. Now we are ready to start scooping!
Let me take a break from cooking to tell ya about 2 of my FAVORITE baking tools. First, the baking mat. These silicon baking mats are amazing. There is no need to spray your cookie sheet and the cookies come off perfect every time. Second, the scoop. These scoops are amazing. They are great for fast and perfectly shaped cookies. Every one is the same size so no more fighting over who has the bigger cookie. Alright, enough about that, back to baking! Scoop the dough into balls and place them about 2 inches apart. Bake them at 375 degrees for 6-10 minutes or until golden on the outside. I prefer to let them cool on wax paper. But if you prefer, you can cool them on a wire cooling rack.
These cookies are soft on the inside with a little crisp on the outside. They are great with a tall glass of milk or you can make ice cream sandwiches out of them, ya know, since they are all the same size! Enjoy!
